Byron Bay has evolved from its free-spirited roots to a more polished coastal destination, and the culinary scene is leading the charge with an array of shiny new eateries catering to discerning palates.

Introducing Bonito Byron Bay, the freshest kid on the block, positioned on the ground floor of the sleek new Hotel Marvell.

Helmed by Chef Minh Le (ex-Spicers Peak Lodge, The Byron at Byron, The Foraging Quail), Bonito celebrates the bounty of produce from the fertile Northern Rivers region, delivering a seafood and plant-based menu with dishes fused with Minh Le’s heritage.

The sophisticated menu at Bonito reflects their ethos of sustainable and responsible dining. Guests can expect a culinary journey starting with organic sourdough accompanied by house-cultured miso butter to oysters with Japanese dressing and topped with tobiko and sashimi salmon with compressed apple, shiso and split coconut emulsion rounding out the some of the sublime fresh flavours on offer.

The menu is ideal for sharing, so bring your crew and prepare to be wowed. Highlights include the octopus with piquillo salsa, pickled onions, radish and curry leaf, while the lolligo squid is no ordinary dish – it’s a work of art. Dressed in Coopers Shoot chilli relish, grapes and squid ink tuille it’s a dramatic looking dish and tastes as good as it looks.

Save room for dessert with the humble banana sponge cake receiving a glow up with wattleseed dulce de leche, banana tullie and coconut sorbet that conjures memories of summer in every bite.

The kitchen’s meticulous execution of each dish and the range of light plant-based dishes or fresh from the sea flavours leave you feeling sated rather than glutinous after an evening of delicious dining.

While we dined alfresco for the restaurant preview, inside the restaurant’s interior beckons with its warm but minimalist design. Think earthy tones, sleek leather banquettes and imported tiles – the perfect backdrop to let the real stars of the show shine: the dishes.
