Wine lovers rejoice! One of Sydney's hottest hotels has just unveiled an intimate new wine bar.

Mister Percy, a Mediterranean-style wine bar & kitchen has just launched in the heritage-inspired boutique hotel Ovolo 1888 Darling Harbour.

Named after Percy Ewart, a former wool classer at the original wool store who also made his mark (literally) by etching his name in the sandstone building, Mister Percy offers both a menu and wine and drinks list inspired by the arc of countries surrounding the Mediterranean.

Ovolo 1888 General Manager, Amanda Cottome said: "When we came to choosing a name we jumped at the opportunity to pay homage to Percy and the building's rich history. We are also excited to open the only Mediterranean wine bar in Sydney and providing customers with a unique experience through great food, wine, service, and design."

Acclaimed Sydney Chef, Justin North, has collaborated with Head Chef Luca Guiotto (ex-A Tavola, Catalina) to develop a coastal European menu showcasing Mediterranean flavours and techniques, anchored by seasonal and mainly local produce.

The menu includes a selection of smaller skewed snacks or pinchos, as well as larger dishes and Australian artisan cheeses, all designed to be enjoyed with a glass of wine in hand. Sounds perfect right? Signature plates include Citrus-cured Hiramasa Kingfish with Horseradish Yoghurt, Verjuice and Carasau Bread and Gnochetti with Zucchini, Cime di Rapa, Fine Herbs all designed for sharing. As with most Ovolo Hotels, there is a large selection of vegetarian options available.

The carefully curated 100-strong wine list features mainly Mediterranean-style wines and varietals. With a bent towards smaller producers and left-of-field varietals, expect to see Mencia and Cinsault from southern Europe and closer to home, Sangiovese and Pinot Grigio from Victoria's King Valley.

Mister Percy's cocktails share the same European flavour, so expect a great Negroni or Aperol Spritz plus a strong selection of aperitifs and digestifs. We think the striking new lobby lounge is the perfect place to unwind with a Negroni at the end of the day!

Mister Percy is open to visitors and guests every night of the week from 5pm. The intimate bar, seats just 60 guests and is destined to become a inner city haven known for its classic cocktails and Mediterranean food and wine offering.

Make a night of it with a stay at Ovolo 1888 Darling Harbour. Housed in a converted wool store, this quirky boutique hotel is a great base to explore Sydney. Book online with no fees at alluxia.com
