Byron at Byron unveils multi-million dollar refresh

The popular Byron at Byron is set to reopen on 1 September 2020 after a multi-million dollar refurbishment.

Nestled within 45-acres of subtropical rainforest, Byron at Byron's new look by EJE Architecture and Suede Interior Design will celebrate the local environment and community. From check-in to check-out, guests will be immersed in the resort's surrounding tropical landscape.

The resort, now part of Crystabrook Collection is in the final stages of a $6 million refresh and the first phase to be unveiled is the new restaurant offering. Forest Byron Bay will showcase sustainable and local produce, with 80% of all ingredients sourced within a three-hour drive from Byron.

Led by Executive Chef Etienne Karner who has made a seachange from Sydney to Byron, bringing with him his world-class experience including his most recent stint at Park Hyatt Sydney.

Forest’s opening menu will serve contemporary, approachable and distinctly Australian cuisine. Highlights include poached Ballina king prawns with avocado, green apple and coriander, Paroo kangaroo tartar with lemon myrtle mayo, line caught local Jewfish with Windaboo mushrooms or for the sweet tooth, a nest of Kataifi pastry with white chocolate and salted caramel parfait.

The luxurious surrounds are the perfect spot for sipping cocktails. Why not try the Butterfly Gardens signature cocktail with Ink Gin infused with rosemary, St. Germain Elderflower Liqueur, lavender and fresh lemon. Alternatively, peruse the national and international wine list, with options for every budget, as well as a selection of more than 30 sustainable, organic and biodynamic wines.

Meanwhile, the next phase of the refresh will include updated guests suites and a new Eléme Day Spa, which is scheduled to be unveiled in November.

The refreshed guest suites have been aptly named to reflect the resort's setting, from Rainforest Suite and Treetops Suite, to Rainforest Luxe Suite and Treetops Luxe Suites. The resort will extend its offering to include a two-bedroom Rainforest Luxe Suite and a two-bedroom Treetops Luxe Suite ideal for families or girls’ getaways.

The Rainforest Suites on the lower level look into the rainforest while the Treetops Suites on the upper level offer elevated views of the rainforest. All suites offer fully-enclosed front and rear verandahs, rainforest showers, freestanding deep soak bathtubs and separate living areas.



In addition, 90% of all printed collateral has been removed from the resort through the introduction of touch-free paperless check-in and checkout along with in-room Apple iPad control centres as part of the resorts commitment to sustainability and the company's approach to responsible luxury and sustainable travel.
