alluxia team member Sally Scott finds a luxe beach break at Fairshore Beachfront Apartments, Noosa.

I wake to the sound of crashing waves, pull back the curtains dramatically, inviting in the dazzling sunshine and admiring the postcard worthy view.  Good morning Noosa.

Noosa is a holiday favourite for sun worshippers and foodies alike, just 2 hours north of Brisbane.  Noosa’s Main Beach & parallel Hastings Street are lined with award winning restaurants and the region provides a bounty of delectable produce.

Our luxe digs for this midweek escape is the Fairshore Apartments Noosa. A million dollar facelift including on trend minimalist beachside styling has ensured the interiors are now worthy of the commanding central Hastings Street location.  Just meters from the sea, this breezy beach pad has the ambience of being relaxed & inviting.  There is no grand lobby, but after a friendly checkin we make our way along the maze of stairs to our sundrenched apartment.

The resort boasts absolute beach frontage and has been designed so that every apartment faces the ocean for maximum impact.  Expansive balconies with both outdoor dining and sun lounges means its hard to tear yourself away from the alfresco space.  Inside, it’s all white washed walls, with furnishings in muted tones and a large designer kitchen with communal table built for entertaining.

My plan for the day ostensibly revolves around my tastebuds with the biggest decision of the day whether to stay in and cook in the gourmet kitchen or eat out.  Outside your room, temptation awaits, with plethora of dining options and where coffee drinking, gallery browsing and window shopping are the order of the day.

Breakfasts are best taken beachside and there is none better than downstairs at Berado’s Bistro on the Beach. A concise selection of gems include Toasted Muesli, Strawberry Gel, yoghurt, strawberry shards is a delicious kickstart.

I manage to steal some alone time in the heated pool at Fairshore, pleased with myself for pumping out a few laps before rewarding myself by sliding into the spa which is just inches away from the boardwalk, providing fascinating stealth people watching while I lazily doze in the soothing water.  People stroll past on the boardwalk and admire longingly at the luxury oasis behind the glass fence separating the general public with the fortunate few.

For dinner we decide on Bistro C, which combines show stopping views, impeccable service with quality food.  This Noosa institution, receives an annual facelift and the current style is light and breezy with some quirky, artistic touches.  The menu takes on a seafood edge as you’d expect from this seaside location. The egg fried calamari with chilli, lime and coriander syrup is always a winner and an easily shared entrée.  Mains are also in hearty proportions and the crisp skinned atlantic salmon fillet with warm salad of chat potatoes, chorizo, parsley and roasted peppers, orange pistou and minted pea relish is satisfying.  Desserts are also to die for, but our kid at heart decided to forgo the temptation and opt for gelati at Gelatissimo as we stroll home.

Content after an evening of gastronomic highlights, we turn in for the evening, knowing the sound of the waves will lull us off to sleep and dreams of another perfect Noosa day.
