Archie Rose | Sydney NSW
Located in the Cannery complex in Rosebery, the distillery and bar is a hidden Sydney gem. The bar has a warm glow, flanked by a wall of ageing whisky casks. You'll be warmly welcomed by the bar staff who can take you through a flight of gin tasting while you feast on epic cheese platters. You can pre-book a distillery tour online or take a masterclass to learn first hand how Archie Rose produce their gins, whiskies and vodkas.

Four Pillars | Yarra Valley VIC
An outstanding tourism experience, Four Pillars is a must-visit when visiting the Yarra Valley. Just one hour from Melbourne, on the main street of Healesville in what was an old timber merchant's shed has now been transformed to a craft gin distillery. Inside it's an impressive space with a distillery viewable through portholes and long bar for mixing cocktails and tasting station.

Kalki Moon | Bundaberg QLD
Rick Prossser (ex-Bundaberg Rum) launched this family owned and operated business in Bundaberg in 2017 and has continued to expand its boutique operations due to high demand. Kalki Moon offer free guided tours of their distillery followed by the opportunity to have a taste of your choice. No bookings required for tours, so make sure you pay them a visit when you're in Bundaberg.

Lark Distillery | Hobart TAS
Primarily known as a whisky distillery, Lark also blends premium gin in their Hobart distillery. Situated on the stunning Hobart waterfront, Lark Cellar Door offers the opportunity to taste Tasmania's finest distilled spirits in a warm and inviting atmosphere.

Cape Byron Distillery | Byron Bay NSW
Nestled in the Byron Bay Hinterland, family-run Cape Byron Distillery is a must-visit for gin lovers. The distillery is a great place to learn more about gin and grow your gin appreciation. This boutique distillery captures and showcases the unique terroir of the Northern Rivers in its rainforest infused gin. The estate's subtropical rainforest provides a plethora of unique edible native species and botanicals including Davidson plum, aniseed myrtle and cinnamon myrtle. Of the 26 botanicals in Brookie's Byron Dry Gin, 18 are sourced locally, many from the surrounding rainforest.

Applewood Distillery | Adelaide Hills SA
Applewood Distillery in the Adelaide Hills seeks out native ingredients and support farmers who opt for more sustainable farming methods to create their unique and distinctive gin. Open 7 days per week, stop by as a change from wine tasting in the Adelaide Hills.

Fortune Distillery | Noosa
Noosa Heads Distillery is everything you didn't know you were missing on the Sunshine Coast. Housed alongside the Land & Sea Brewery in Noosaville, the hipster haven is a must-visit when you're next visiting Noosa. Launching with three spirits; a Signature Dry Gin, Vodka and White Malt, Fortune Distillery is the brainchild of Tim Crabtree and a team of young guns including Head Distiller Jackson Boyd. Proudly crafted in Noosa, Fortune's spirits are created with fine classic cocktails in mind, yet unique enough to have their own personality. 

Husk Distillers | The Tweed
Taste the world’s first colour changing gin, Ink Gin and tour the gin and rum distillery at Husk Distillers. The family owned distillery has created an inviting space to while away the afternoon in the sunshine with friends or family as you sip gin cocktails garnished with seasonal flowers. It’s a must-do on The Tweed!

Lord Byron Distillery | Byron Bay
Where better than Byron Bay for a carbon neutral, zero waste distillery that’s focussed on sustainability. This artisan handcrafted spirits distillery is worth seeking out for their premium rum, vodka, gin and limoncello. Owner and head distiller Brian Restell uses ingredients sourced from their family farm including locally grown vanilla pods for the spiced rums and bush lemons in the limoncello.
